You may have seen the beautiful rainbow trout we hoisted through the ice this past weekend. We just wanted to share with you the recipe we used to prepare a very light yet delicious dish with your favorite white wine.

White wine poached rainbow trout on lemon pepper rice with bacon Brussels sprouts.

Ingredients- Bacon Brussels sprouts...
1/2 lb. bacon


1 medium onion chopped into slices


1 lb. fresh Brussels sprouts - washed

Fry your bacon and onions in a large pan on a medium heat until your bacon is almost done then add your washed Brussels sprouts and fry until tender.

Ingredients- White wine poached rainbow trout (2 fish)


3 cups of white wine
9 cups of water
2 springs of rosemary
1/2 a sliced lemon
1 tsps. cracked black pepper

1. In a large pan bring your 3 cups of white wine and 9 cups of water to a simmer on medium heat with your lemon rosemary and cracked black pepper.


2. Add your 2 trout to the poaching liquid making sure this liquid doesn't come to a boil. poach your trout for about 13 minutes or until the trout is flakey and fully cooked.

Ingredients- Lemon pepper rice
1 1/2 cups of uncle bens converted brown rice
3 1/3 cups of water
1 tbsp. of butter
2 tbsp. of lemon pepper Mrs. Dash seasoning
1 cube of chicken stock

In a medium pot add rice, water, butter, Mrs. Dash, and chicken stock. Cook rice for 15 minutes or until done.

Place your rainbow trout over your bedded lemon pepper rice & your bacon Brussels sprouts, garnish this dish with fresh rosemary and chives.

This preparation method produces a very light yet delicious meal compared to your classic fried trout.

Enjoy this dish with a glass of your favorite white wine.

A simple yet delicious moose steak dinner

Ingredients:

1 lb moose meat - cut into 1/2 inch slices

1 onion - minced & added to medium heat heat skillet

1 clove of garlic - minced & added to medium heat skillet

2 tbs butter - melted in frying pan on medium heat skillet

1 pack of fresh mushrooms - cut into slices & added to skillet

6 medium potatoes -cut into cubes and boiled until soft then mash with 1/4 cup of milk and 2 tbs of butter - you can always use an electronic whip for a more creamy texture.

5 tbs garlic & herb miss dash - added to mashed potatoes & whipped or mashed

1 bunch broccoli - cut into slices and

boiled on medium heat

5 carrots - cut into slices and boiled on medium heat with the broccoli

I make my gravy and Sautee my mushrooms garlic, butter, and onion in a frying pan. Then I pour my gravy and veggies onto my moose steaks in a deep oven dish and bake at 350 for 25 - 30 minutes.
